By steaming, the abalone becomes very soft and the flavor is concentrated. Please enjoy the soft and bouncy texture of the abalone, which is different from the crunchy texture you get when you eat it as sashimi. ■ Chef's special dish ■ "Steamed abalone in Denshu sake" Abalone grown in the cold region of Aomori Prefecture are thick and soft, and have a moderate chewiness. Such abalone is steamed in "Denshu sake", the prefecture's representative sake. This sake, created with the desire to "return to the origins of sake and make a dignified, authentic sake", has received high praise not only from within Japan but also from overseas. ■ Hot spring ■ "Free-flowing hot spring water" The bath at Tsuta Onsen is a very rare "free-flowing hot spring water" bath in Japan. The bathtub is located above the hot spring, and raw hot spring water springs up from the bottom of the bathtub. The pure water, which does not pass through pipes, is full of the blessings of nature. Enjoy this secret hot spring that has existed for a thousand years since the Heian period. The height from the bathtub to the beams is 12m at its highest point. In that space, the water flows out, creating a sound like the murmuring of a spring.
