Please enjoy the natural flavor of the ingredients. ◆What is kinkin... The official name of "kinkin" is "kichiji", but it is also commonly called "kinki" or "menme". It is found mainly off the coast of Tohoku to off the coast of Hokkaido, and is a high-class fish called the "red jewel" because of its soft white flesh and abundant fat.
